About Biànca 

Biànca was born out of a desire to bring the spirit of Italian dining to Brisbane’s Fortitude Valley, capturing the effervescence of a classic trattoria within a sleek, warm, and colourful setting. The food focuses on perfecting classic Italian dishes, made in-house with fresh, seasonal produce. The beverage program is thoughtful and balanced, featuring Italian-leaning wines and seasonal cocktails that complement the food and the vibrant atmosphere.

The Role

Biànca is looking for an experienced and energetic Bartender to join the team at our fast-paced Italian restaurant. This role is suited to someone with strong cocktail and spirits knowledge who enjoys engaging with guests and working as part of a busy, focused team. You will be responsible for delivering warm, efficient bar service that supports the flow of the venue, with a focus on consistency, clean execution, and collaborative communication across the bar and floor.

• Previous experience as a bartender in a high-volume or quality-driven venue
• Solid cocktail-making skills and spirits knowledge
• Confidence in guest interaction and upselling with care
• Ability to stay composed and consistent during busy service
• Attention to detail in presentation, cleanliness, and organisation
• Strong collaboration with the floor team and FOH leaders
• Understanding of POS systems, RSA compliance, and bar prep
• A proactive and respectful team mindset
• RSA Certificate required
